First put a whole cut-up chicken in the crock pot and cover liberally with BBQ sauce. Cook all day and enjoy the chicken for a few days. Save the liquid.
The next time you need to make a dinner, combine in the crock pot:
the saved liquid from cooking the chicken
any chicken you have left over
1 can of black beans
1 can of diced tomatoes
1 can of corn (or a 10 oz. bag of frozen corn)
1 chopped onion
1 chopped bell pepper, any color
1 20-oz can of enchilada sauce
1 can condensed mushroom soup
1 handful dried mushrooms, broken up
1/2 cup pearled barley
diced potatoes (until the pot is full)
Add water or milk to cover if needed
Cook all day and right before you eat it, add:
1 cup shredded cheddar
1 cup shredded Monterey Jack
Serve with shredded cheese and a dollop of sour cream
